$250 doesn't buy you out of them monetizing your data. last year they started selling what content is being watched. next money grab will be selling the list of what's in your media library, all they have to do is update their terms to allow it, like they did last year.
Except you still don't get hardware transcoding (or the mobile app... IIRC?), there are some workarounds, last I checked, but I suggest using Jellyfin instead.
Jellyfin works really well in my experience, but there are definitely some things Plex does better.

Jellyfin exists.
Plex + Tailscale = access it from “localhost” wherever you are. Just set up Tailscale serve to serve it in your tailnet.
