    I have found out during the recruiting process that it is much easier to train the uneducated enthusiastic than to enthusiasm the educated

      Hmm, the educated are likely to be carrying more debt (student loan debt, for example), and possibly hoped that having gotten credentialed would have paved the way to a job they could be enthusiastic about... only to have those hopes dashed. Not sure the uneducated are likely to have a lot of enthusiasm either, though possibly beginner's mind would make it easier for them to learn without pushing back that they already know another, better way.
